Chicken Vegetable Stew
Ingredients:
1 tsp oil
1 Tbsp grated ginger
1 green chilli, finely chopped
1/2 kg boneless chicken
½ cup sliced cabbage
½ cup sliced carrot
½ cup chopped green beans
½ cup cubed boiled potato
½ cup finely chopped fresh spinach
Salt and pepper to taste
Water as needed
Method:
In a pot over medium heat, heat the vegetable oil. Add the ginger and green chilli. Cook until aromatic.
Add the chicken, cabbage, carrots, green beans, potatoes, and spinach. Season to taste with salt and pepper and stir well to combine. Cook until the vegetables begin to sweat. Increase the heat to high and continue to stir until the chicken is cooked.
Shred the chicken with the help of a ladle.
Add enough water to the stew to reach desired consistency. Cook for 5 minutes more. Serve hot with rice.
